A Summer soup that will help you see in the dark
Recently we've been trying to fin out what kinds of information our readers and clients want access to. One of the things that you came up with was more help with your nutrition and healthy snacks.
One of our awesome trainers Holly has stumbled accross a recipe for a yummy soup, unlike many yummy soups it's actually healthy too :)
So here's Holly, enjoy!.....
Holly here, I found this recipe and fell in love with it so I thought I'd share it with you :)
I know it doesn't sound like anything flash but trust me it's good!
Here it is, hope you enjoy
1 tbspn oil
1 onion - roughly diced
6 large carrots - sliced
1 litre vegetable stock
1/3 cup fresh coriander - finely shredded
Pinch of salt and pepper
Heat a large soup pan. Add onion and oil, cook until soft.
Add carrots, salt, pepper and stock.
Simmer on high until carrots are soft - approx 30 minutes.
Allow to cool for 15 mins at room temperature.
Puree well in the blender.
Add coriander to soup mixture and mix well. Return to pan and heat thoroughly.
